The traditional diet of Zambia is starch (carbohydrate) based with the staple Nshima, a food cooked from plain maize or corn meal or maize flour known as mealie-meal among Zambians. Along with Nshima Zambians eat home grown vegetables, some fruits and beans with small amounts of animal foods. Even with this high carbohydrate diet most Zambians are lean, and usually only overweight when working at a location, like a lodge, where Western guests come and stay and more Westernized food is prepared. Steve Kuhn, Co-Founder of the Africa Hope Fund, notes that many people from the U.S. who come to see their community projects, such as schools, have significant weight loss eating this traditional diet.
Carbs (carbohydrates) don’t cause obesity, the sugar and fat added to carbohydrates in this country, along with the high amounts fatty animal products consumed, significantly contribute to the obesity epidemic.
The Africa Hope Fund was-cofounded by Carol Van Bruggen-Kuhn and Steve Kuhn about 8 years ago and is a Sacramento based nonprofit. Their mission is to educate the next generation of Africans to ensure their future by saving elephants and other wildlife. They do this by helping support existing nonprofits in Africa who educate the next generation to preserve their heritage and work to keep elephants and other wildlife from becoming extinct.
